Overlooking the iconic Merlion, the symbol of Singapore, Le Méridien Singapore, Sentosa one of our favorite hotel in Sentosa once again took us on a gastronomical ride recently in their newest weekend Buffet food tasting. Inspired by the local flavors and what Sentosa has got to offer, we discovered an exciting and delectable medley of seafood specialities found from all around Singapore at their all-day dining restaurant, Latest Recipe (formerly known as Tablescape).

Seafood lovers must not miss this latest culinary offering with plenty of surprises awaiting, let us bring you more on what keeps us coming back over and over again. 
First up, we head over to the appetiser’s table to be blown away by the freshness of the seafood peppered on the ice. Seafood on Ice boost of Freshly Shucked Oysters, Emerald Prawns, Scallops and New Zealand Mussels. Across the other side of the wooden table, there were Do-it-yourself Singapore Rojak, Vietnamese Cabbage Salad and Beef, and a gourmet menu of cold hor’douvres such as Thai Glass Noodle Salad, Tahu Goreng with Peanut Sauce and Japanese Maki and sushi.
Alongside with all-time local favorite dishes such as Crispy roasted meat (e.g Pork Bell, Char siew ) with chicken rice and noodle station that prepares Le Méridien’s unique style Black Pepper Char Kway Teow as well as a pot of Pork rib soup to warm up the belly.
In additional, the main dishes compelling unique Asian flavours such as our favorite Flower Chilli Crab with mantou, Sambal Stingray, Beef Rendang, Wok-fried Prawn with Golden Cereal and much more! 
Furthermore, there are additional surprises to the buffet spread, we were pampered with a serving each of seafood specialities liked the Baked Boston Lobster with Hollandaise sauce, Singapore-Style Black Pepper Boston Lobster or Pan-fried french Duck Foie Gras with Dark Cherry Compote! Such a Seafood feast Offerings!
Lastly, for those with sweet tooth, be impressed by their dessert corner (not just a corner, more liked a SPREAD) – hop around and grab a plateful of local authentic desserts liked Tau Suan and Chendol! Or savor a taste of the Le Méridien’s Signature eclairs in locally inspired flavours such as Pandan Kaya and Raspberry coconut!
